Beck's Sea Change album has interesting and appropriate 5.1 mixes, including one song where the whole soundstage slowly rotates around the room in a very spacey way. Michael Tilson Thomas and the San Francisco Symphony have collaborated with Sony in producing a wonderful Mahler cycle in hybrid SACDs that do NOT go for special effects, but reproduce the sound of the orchestra and hall very successfully (enough to have won some Grammy awards).
Pick your favorite Mahler, if you haven't gotten to know him, his Symphony #1 is always a good place to start. The Grateful Dead's American Beauty was remixed for 5.1 by Mickey Hart, drummer for the band and percussion maestro for the Library of Congress. He used the master multi-track tapes and incorporated some previously unused bits from the original sessions in his mixes. The Beatles 'Love' in 5.1 was remastered for surround by George and Gilles Martin using some amazing mixes of original Beatles recordings blending with each other.

It's a whole new/old thing. And as others have mentioned, Pink Floyd's 'Dark Side of the Moon' is even more impressive in 5.1 than in stereo, but then these guys were mixing their live concerts in quadraphonic in the 70s, when everyone else's concert sound was mono (and often still is).
